It’s probably time to switch things up with some healthy French toast if protein pancakes are becoming a little old for you. With a few adjustments, you may create a breakfast that is both healthier and more resembling the original.
There’s no need to figure out “how.” A recent Instagram post by celebrity trainer Harley Pasternak, who has an MSc in exercise and nutrition, described his healthier take on French toast.
The specifics: Pasternak employs 80-calorie pieces of cinnamon raisin bread and egg whites in place of thick slices of bread, entire eggs, cream, milk, sugar, etc. In addition, rather than the customary maple syrup, powdered sugar, or butter, he tops the French toast with fresh strawberries and blueberries.
The cooking method used by Pasternak is also different from how French toast is typically made (and is also simpler). He places the bread right onto a skillet that has been coated with cooking spray before adding the egg whites on top. He places a plate on top of the pan to flip the toast in one piece when the egg whites have set and turned golden brown, and then he proceeds to cook the bread on the other side. Everyone has different tastes, but I cook it until it develops a small amount of an outside crust, he explains. “Occasionally, once it has finished cooking, I’ll even pop it in the toaster oven to make it more crunchier.”
According to Pasternak, the finished meal contains “far less sugar, much less calories, and exponentially more protein” than regular French toast. The devil is in the details. “This recipe allows you to use a lot of egg whites. It’s a fantastic source of protein to have in the morning, “He clarifies. Additionally, the berries on top add flavor and fiber to the dish. Pasternak adds, “And there are little pieces of sugar in the cinnamon bread—no sugar anywhere.

- Over medium heat, add the bread pieces to a lightly oiled nonstick pan. As you equally distribute the liquid, pour the egg whites over the bread. Cook for about 2 minutes, or until the bottom is golden brown.
- Flip the pan over after covering it with a plate. Return the French toast to the pan and cook for 2 minutes, or until the second side is golden brown.
- Slice, then sprinkle the berries on top.
The quantity of egg whites Pasternak uses is determined by eye, he claims. Pour until you’ve completely covered each slice with liquid and filled up the gaps in between each slice.
